Apple Berry Oatmeal Cups

Do you have a hard time fitting in a healthy breakfast? Having food prepared ahead of time can be a gamechanger when you’re rushing out the door in the morning. These vegan apple berry oatmeal cups are perfectly portioned, delicious and easy for a quick, satisfying breakfast. It’s no secret that baked oatmeal is one of my favourite, make-ahead breakfast options. I love warm oats, but when I’m rushing out the door, simmering oats can feel time consuming (plus, there’s the saucepan to wash). These apple berry oatmeal cups are super simple to make and I guarantee you probably already have the ingredients on hand. The fibre from the oats will help keep you full for the long haul.



Last weekend I planned to make baked oats as usual, but with a twist: baking them into muffin tins, rather than a baking dish. This makes meal prep all the easier because everything is portioned out and ready to go. Baked oatmeal cups make a great breakfast for on-the-go when you don’t have time for a sit-down breakfast. They are great on those busy school mornings when you’re running out the door but you still get to enjoy a hearty and comforting breakfast.



Okay, let’s be honest: these oatmeal cups sound *yawn* boring. but! their perfection is in their simplicity, and i mean it when i say these muffins are super addicting, flavourful, and delicious. Plus they look really cute, too. So flavourful from the applesauce, blueberries, and chopped apples, full of great texture from the oats, and so soft and sweet from all those things combined. You will totally have no idea that these are vegan. These are a perfect on-the-go snack, they’re lunchbox ready, or pop them in the freezer and microwave one for breakfast!
