Apple Pie Overnight Oats

How do you like the sound of starting your morning with the warming taste of apple pie, without all the calories and fat? It sounds good to me! Having oatmeal for breakfast is the perfect way to start your day with energy and happiness. I use to have a huge smoothie first thing in the morning, but if I can’t have it because I’m not at home and I can’t get a blender, oatmeal is my second choice. I also make it when I want something sweet, warm, comforting and easy to make.



I love, love, love this bowl. It’s thick, creamy, warm and full of apple-cinnamon flavour. This vegan apple pie overnight oats is a delicious vegan breakfast made with diced apple, cinnamon and some maple syrup for extra sweetness. Can you think of a tastier food combination than apple and cinnamon? They are the perfect match, especially at this time of year. I love the fall, and while I do appreciate a good pumpkin recipe or two, apples are where the fall vibes are truly. This healthy meal prepped breakfast will warm your tummy and satisfy you for several hours with minimal effort.



To add some extra flavour to the apples what I do first is mix them in a bit of maple syrup and adding in the cinnamon after a couple minutes. This allows the apples to caramelise and infuse the whole dish with more flavour. I call it vegan apple pie baked oatmeal because it has all the flavours of a delicious apple pie. The oats actually take on a bit of a streusel quality, and the apples get all baked and soft just like in a real pie.
