When I feel a little burned out from everyday cooking, I often turn to meals like this vegan asian-style tofu pasta for dinner. It is quick, simple, so flavourful and soo tasty! This pasta is ready in 15 minutes and the result is a dish with a lovely umami flavour that I’m in love with. The star of the show today is Miss Tofu herself, it is a highly-recommended extra. It is great not only for texture and flavour, but a boost of vegan protein.
Pasta is one dish that my mother made all the time when I was growing up and I’ve continued to make it for my family. It’s really easy to make, you only need minimal ingredients and my friends absolutely love it too! For this dish, the important thing is to crumble the tofu first, and then let it simmer and hang out in the pot for a while. This will allow for the tofu to absorb the flavours.
Pasta is one of the loves of my life, basically. Throw it in a pot with a few ingredients and you’ve got a quick, cheap meal that never lets you down. I know that as a student, meals that are quick and convenient, but healthy and filling at the same time will be more important to me than ever. Also c’mon, who doesn’t want to bring a giant bowl of healthy pasta to work or school?
