Well, this baked donut recipe is so much easier to make and less messy — no yeast, no waiting for dough to rise, no deep frying & absolutely no hogs were harmed when making these. What’s not to love?
The donut pan is back in action, y'all! Today is such a beautiful cosy day. I love it when the weather decides to give me a break from life. It’s the worlds way of saying; “hay why don’t you chill out today, drink some hot chocolate and binge watch your favourite series”. Maybe it’s just me, but I love chilly days. I always feel so inspired to stay indoors and get a little creative or bake, and so today I clearly decided to bake.
These vegan baked donuts that are iced with a ginger glaze are so yummy, comforting and perfect for a day like today. They truly taste like carrot cake, they have the texture of carrot cake and the glaze of a carrot cake. Okay, They are pretty much carrot cakes with holes in them!
Baked donuts are like little cakes as they are baked in the oven in a donut tin. I’ve spiced these carrot cake baked donuts with cinnamon, ginger and nutmeg and drizzled a sweet glaze over the top. They are truly yummy and will delight vegans and non-vegans alike. I made a ginger simple syrup to use for the glaze for these donuts that resulted in a whole lot of extra syrup and candied ginger.
Strange as it may sound, I didn’t used to like carrot cake. Nowadays, I absolutely love the stuff! I find the spiced sponge and sticky glaze rather irresistible. Honestly, I’ve never been a huge fan of fried donuts, they’re just really heavy and not something I prefer to eat for breakfast. But when it comes to baked donuts? They’re so soft and light, I could literally eat the whole batch. Especially if they come in the form of carrot cake donuts and they’re topped with ginger glaze icing. Oh yes! Plus they have veggies in them too, which makes them perfectly acceptable for breakfast. Right? Right.
All of my donut recipes are already pretty dang healthy, but since this one has a veggies in them, they’re even healthier right? I’d say so. Sneaking vegetables into a dessert or sweet breakfast gives me peace of mind knowing that I’m getting in an extra serving of veggies without even tasting it, and it also fills ya up just a little bit more.
Also, this carrot cake donut is a simple donut with a lot of natural sweetness, which I prefer over sugary donuts. Don’t give me donuts covered candy bars, crushed cookies or cereal! I want to actually enjoy the taste of the donut, in all its sweet dough glory! 🙌🏻
I didn't have enough for the donuts because of all my, ahem, taste testing. But it's okay because that's a few less calories for me, since you know, I do eat the whole batch when I make these. 14 might sound like a big number, but it's the holidays, so it's all good.
