Who wouldn’t want a big, fat stack of fluffy pancakes. especially if they’re these fluffiest vegan banana buckwheat pancakes? These vegan and gluten-free buckwheat pancakes are proof that you can make tasty fluffy pancakes without any gluten, eggs or milk! Even if that milk is dairy-free. Well, at least I can say these were healthier than most pancakes. They contain some healthy fat from coconut oil, are a great source of fibre and actually have some antioxidants to protect you from free radicals! Do you know that buckwheat flour, despite it’s name, is made from a gluten-free whole grain. the flavour is nuttier than other flours. 1/4 cup of buckwheat flour contains 4 grams each protein and fibre! A fabulous whole grain, if i do say so myself.
I was initially sceptical about the idea of buckwheat pancakes so I played around with varying degrees of buckwheat:gluten-free flour ratios so I could create a pancake that had a hint of buckwheat flavour but not too much. However, I realised that the more buckwheat flour I used, the fluffier and more delicious the pancakes became. so, I went all in and tried making a batch with 100% buckwheat flour, and guess what? They were the best! I’m really happy with how these turned out, both in terms of flavour and texture, but also because using 100% buckwheat flour means less ingredients, making them easier!
