Banana Oat Pancakes

Friends, behold perhaps my favourite pancakes of all time. I mean, that’s a big statement, but it’s true. And can I also say that it was a long road to get here? What started as “blender oat pancakes” gone wrong morphed into this supreme stack of golden goodness – the victory was well earned. Gotta say, my blender got a serious workout creating these gluten-free and vegan blender pancakes. Because I probably tried about 20 variations of the recipe before I was finally happy with it. And then made them about 20 more times to make sure I got them right. Okay, that last part was a lie. I made them 20 more times because these vegan banana oat pancakes were so good! I added turmeric powder for added nutrition but it's optional.



Although the idea for 3 ingredient flourless pancakes has been going around the internet for a few years, every recipe I’ve ever seen has always included an egg as one of the three ingredients. In trying to think of something for the eggs, I listed all of my favourite egg substitutes. Banana was especially intriguing to me because it not only could replace the egg as a binder but also would add potassium and give the pancakes some natural sweetness. I didn’t know how it would turn out, but I was excited to experiment. My favourite recipes are the ones where you look at the ingredients and think, “There is absolutely no way this could possibly work!” I wanted to create a healthy pancake that was vegan, gluten-free, and oil-free, but didn’t come out looking (and tasting) like a hockey puck. The first attempts were definitely dense (and often fell pretty flat, too). But I persevered, and finally ended up with these tasty morsels.



Thick, fluffy and packed with protein, these healthy banana pancakes are a delicious vegan and gluten-free breakfast! The combination of bananas, plant-based milk and oats are combined to produce these flourless pancakes. You know, those times that you question even calling it a stack. More like a plateau of pancake–wider than it is high. Too thick to be a crepe, too thin to be a proper pancake, just lost in that confusing breakfast food gray zone. Made without eggs, you’d be surprised to see just how fluffy these eggless pancakes are! Nothing is more pancake pitiful than a stack with no fluff. That must be avoided.
