Banana Yeasted Walnut Loaf

There’s nothing quite as comforting as a warm slice of banana bread. It evokes childhood memories I didn’t even know I had (I probably don’t actually have these memories because my mum wasn’t a baker…). This is my go-to banana bread, either when baking for somebody vegan or deciding to make banana bread because there are some overripe bananas in the fruit basket again. To tell you the truth, I almost always buy too many bananas and let them get overripe just in order to make smoothies or this vegan banana bread.



Over the years, I’ve tested oodles of vegan banana bread recipes and never settled on one that I thought was “it”. Too dense, too dry, too moist, lacking banana flavour, too sweet, not sweet enough, etc. It drove me nuts. Each time, I would tweak my recipe a bit more. But this is 'The One', my friends. It is crazy to think that, in so many years, this is my very first vegan banana yeasted bread recipe on the blog. Well, enough is enough, I say!



Banana bread is one of those classic, all-American comfort food recipes that fills the whole house with warmth and makes everything better. Banana bread is magic and I think the reason I love banana bread so much is that the simplicity of the ingredients and technique belie the incredibly delicious, satisfying taste. It’s the epitome of a low-effort, high-reward recipe, which is my favorite kind of recipe during this strange period of staying home.
