Beetroot Chocolate Scones

So this was one of those recipes I created by messing around in the kitchen. The first time I made these I literally just threw a bunch of ingredients in a bowl and they turned out amazing.



I do realise that baking is a precise science, and to allow you all to replicate my creation I need to give some more exact measurements. So I had to make them again. Oh well! You won’t catch me complaining about fresh scones, especially when they are vegan! Plus the flavour is quite hidden by the chocolate and cardamom. Beets are a fantastic source of fiber, vitamin C, folate, and magnesium. This root veg is also free of fat and can work to help your body detox and aid in weight maintenance. It has also been found that the rich nitrate content in beets can actually give you extra endurance if consumed before exercise! Do you need another reason to add these pretty and nutritious roots to your diet?



There were leftover beet puree in the fridge and the sudden craving for a warm scone led me to create this recipe. I don’t think I’d ever seen a beet scone before, but I figured they would be pretty awesome. And guess what, they are! I made a first attempt and voilà: the prettiest little pink scones were born! Although it seems like a savoury meal on first sight, these vegan beetroot scones also have a chocolate flavour. Yes please! Did you know that beets are incredibly nutritious and what better way to increase your veggie intake than through scones and cupcakes? Dream come true. Don’t be turned off by the mention of beets in a pastry. Beets are naturally sweet, and how can you beet that colour?
