On a scale of 1-10 how okay are you with green pancakes? These vegan blueberry avocado pancakes are packed with summer fresh blueberries, and they are thick! They were something I made out of randomness. As usual, every Friday I clear out the fridge and surprisingly I still had one avocado left looking all sad and perhaps felt forgotten! These have become my families favourite pancake which I’m glad about because they are super nutritious and really quick and easy to make. Even though they are not overly keen on avocado, they agree it adds a lovely texture to these pancakes. It makes the pancakes even fluffier and loads it up with amazing nutrients. The avocado in the pancakes is hardly detectable, it has absolutely no taste. however, it does make for a creamier pancake batter and sometimes a cool green colour
Why Avocados? Firstly, avocados are one of the most incredible superfoods there is. They have about 20 vitamins & minerals in every serving, including potassium (which helps control blood pressure), lutein (which is good for your eyes) and folate (which is crucial for cell repair and during pregnancy). Secondly, avocados are a good source of vitamins B, C and E, which helps your body fight off disease and infection, and fibre, which helps you feel full longer. Lastly, avocados are a great source of fat— the good fat! Monounsaturated fat, which aids in lowering bad cholesterol.
