Want your kids to get into eating more vegetables? Delicious and healthy, these vegan veggie wraps feature a thin layer of avocado mash, piled high with my favourite veggies, including kale, scrambled tofu, purple onions, vegan tuna and cherry tomatoes. A great solution for meal prep lunch or an easy dinner, which might win them over! They can be a fun little finger food that both works great with kids and can also be brought to any garden party or picnic, or even just served as an appetiser.



Veggie wraps are the perfect lunch or easy dinner to customise to use the produce you have on hand. They are the perfect secretly healthy convenience meal that can be prepped in advance, made super budget-friendly and are great for using up leftover food! The avocado mash acts as a tasty “glue” that holds everything together and adds a boost of flavour. This veggie-loaded wrap is easy to throw together when you’re in a rush to get out the door. I’m talking 10 minutes, tops. You’re going to love the explosive flavour combination of avocado, tomatoes, vegan tuna, onions, and scrambled tofu. Of course, I had to throw some kale leaves in there for some “green.”
