I know I probably say this every time I make a new smoothie recipe but this really is the one of best smoothie I’ve ever had! This vegan carrot-inspired easter smoothie tastes just like carrot cake and is like a dessert that just so happens to be veggie based. It seriously lights me up when they're together as one power-packed, nutrient-dense meal. What better combo than to create my own healthy version of a carrot cake smoothie, sneaking in two types of veggies and it still tastes like a treat!
It’s bright and sunny, loaded with good-for-you ingredients, and it's light, not-to-sweet, and just a little bit creamy. This smoothie recipe shines most in its vitamin C and fiber content. fibre is an underrated part of a healthy diet, so I love when one of my smoothie recipes contains a solid amount of dietary fibre. The other big star in this carrot smoothie is vitamin C. One serving gives you over 100% of the recommended daily intake of vitamin C. So not only will this smoothie satisfy your taste buds, it will also boost your immune system! Also, carrots are definitely under-utilised in smoothies. They’re naturally sweet, and meld perfectly with most fruit flavours, like orange and banana.
Frozen banana and carrots serve as the base of this smoothie. Banana provides creaminess and sweetness, while carrot provides an orange hue and carrot cake flavour. It’s a sneaky way to get some extra veggies into your diet. If your carrots came with their leafy green tops, you can even toss those in while blending!
