Cherry Bircher Muesli

I'm doing my best these days to eat breakfast. One thing that has helped me hugely has been making a meal plan so that I know exactly what I'm going to have for breakfast the next day. Most of the time I skip breakfast because I wake up in the morning and this is my thought process: "I should eat breakfast. maybe I could make pancakes? No, couldn't be bothered, don't want to clean up the mess." or "Ok. I'll just have something quick. toast or oats." or "Oh look, it is 11:30 and I still haven't eaten anything. Oh, well.... I might as well just have an early lunch instead." I don't know if anybody else does that but I do it almost every morning. The only way I can get around it is if I already know exactly what I'm going to eat for breakfast and if possible I have made it the night before. That is why this vegan cherry bircher muesli is the new breakfast appearing weekly on my meal plan. There is not much better than opening my refrigerator in the morning and having breakfast all ready to go. Especially when that breakfast is as delicious as this cherry bircher muesli which this is a breakfast that tastes creamy and decadent but will also fuel me with nutritious, plant-based goodness for the whole morning.



Bircher muesli this time of year is lovely, it is cool and refreshing since there’s no cooking or heating involved. It contains a healthy dose of fibre, healthy fats, plant-based protein, complex carbohydrates, and is incredibly simple to whip together. Traditional bircher muesli is essentially the same thing as overnight oats. Rolled oats, milk, seeds, dried fruit, etc. are tossed together in the evening and left to thicken to creamy perfection until morning. Now, I love overnight oats as much as the next gal, but I often remember to make overnight oats in the morning instead of at night. Not exactly helpful timing, so I often end up whipping up hot oats instead. With the warmer weather moving in, I’ve been looking for a cooler, instant breakfast to satisfy my nearly constant oat cravings.



In the past two weeks I have eaten my weight in cherries. Ha, but really, I have had a lot. They have been finally showing up at the market and while a bit expensive (ok, a lot expensive right now…ugh!) they are just too good to pass up. I have to put to use fresh in-season fruits and the cherries really are the “cherry on top” in this hitched muesli recipe as they give you antioxidant power that can boost your immune system and prevent free radical damage that leads to chronic disease and aging.
