We could all use a few more veggies in our diet these days, right? Well this vegan 'chicken'yakisoba recipe is a delicious way to get tons of bright veggies into a meal! If you don’t know, yakisoba (焼きそば) literally means “grilled noodles” and is a Japanese noodle stir-fry consisting of vegetables and sometimes meat, served as either a main dish or side dish. It’s thought to have originated from Chinese cuisine and became a popular fast-food meal in the black markets that popped up around Japan after the war.

iting. Yakisoba noodles have become quite the staple in our home. We love ordering takeout just like the next family, but this recipe is so quick we can whip it up before a delivery order could even arrive.
This 'chicken' yakisoba is a comforting dish you’ll want to make again and again. I made it twice in one week and I’m already thinking about then next time we’ll get to eat it! It’s deliciously seasoned, and who can resist saucy yakisoba noodles? It is so hard not to fall for yakisoba when you hear that sizzling from the delicious sauce pour the over noodles. While most street food versions of yakisoba are mostly noodles with a few scraps of cabbage here and there, I like loading my yakisoba up with tons of veggies in my fridge, turning it into a complete meal. A quick disclaimer - this is my version of yakisoba and while it may not be traditional or authentic, it definitely was good.
