As usual, I had some ripe bananas lying around and was bored. Bored always means… bake! Typically i freeze ripe and use them for smoothies, but when the mood strikes it’s always fun to make something new. This vegan chocolate banana-stuffed braided bread recipe is not as complicated as it looks. They are soft and sweet with unique two colours braided style.
Once baked the breads are brushed generously with sugar syrup which not only makes it beautifully shiny, but also helps to keep it lovely and moist, preserving it for several days. It does take a little while to make but it isn't difficult, and most of it is hands off time. Now that sounds complicated at first, but it’s really quite simple. There’s no added oil, and the bread is very low in fat. There’s a small amount of maple syrup in the dough but it relies mostly on the banana for sweetness.
