Chocolate Pumpkin Brownies

To be honest, I am a much better cook than I am a baker so when it comes to baking, the simpler the better. I don’t have the patience or time for complicated recipes so I hope you can appreciate this easy 1-bowl vegan chocolate pumpkin brownie recipe as much I do. They are awesome because a) chocolate and b) fudgy chocolate and c) all the chocolate. They are one of the best desserts you could serve for the upcoming holidays. They are vegan, paleo, gluten-free and best of all… super delish. Oh, and they take just 10 minutes to prep and about 30 to bake. Pretty good for such a dessert, isn’t it.

These brownies are quite chocolatey, as you may have guessed. The pumpkin pairs beautifully with chocolate. And I think they lean more towards team fudgy. Also, I have a huge sweet tooth. Every night after dinner I am looking for something sweet…just one of these babies does the trick! I might have to have my mum hide them though because otherwise I’d eat the whole pan…hehe! They taste just as you’d imagine: like a cross between pumpkin pie and chocolate brownies. If that doesn’t sound delicious to you then you’ve never been wronger.

Cocoa powder adds a rich, chocolatey flavour, oat flour keeps these whole grain and healthier than your average brownie, baking powder adds rise, and sea salt brings everything together. The walnuts and goji berries are added to the top for morsels of melty chocolate and a little toasty crunch with each bite. I hope you love these brownies. They’re:

  • Fudgy

  • Rich

  • SUPER chocolatey

  • Naturally sweet

  • Healthier than your average brownie

  • & Incredibly delicious!
