Chocolate Strawberry Granola

There is something about granola that is just so darn addicting. so many textures, crunches, and flavours make munching on it so fun. Plus, the flavour combos are endless, and it’s so much cheaper to make your own homemade versions. Homemade granola is the perfect crunchy addition to lots of breakfast foods like plain yogurt, to eating it like cereal, or even grabbing a handful as a snack! If I had known how easy it was to make granola at home, I would have stopped buying bags at the store a very long time ago. There is nothing *wrong* with them, but once you have tried the real deal, I don't think you'll be wanting to have store-bought granola again either!



It's true ... I'm a granola fiend. Ever since I discovered how to make my own granola at home (and just how unbelievably easy it is), I've been a bit crazy for it. Every week or two, you can usually find me in my kitchen whipping up a new batch, almost always doing something to tweak it here or there. Because I can never leave well enough alone. Also, can we talk about how expensive it can be to buy fabulous granola?! I’ll never understand how a small bag of granola can cost so much in the stores when it seriously costs so little to make a big batch.



When the idea for these vegan chocolate strawberry granola came into my head, it wouldn’t leave until it had been made. I’ve been snacking on freeze-dried strawberries all the time lately. So, I knew they would be the perfect addition to the granola. They have the fruity taste I want but without the moisture from fresh strawberries. Chocolate and strawberries can always make me feel better. The richness of the chocolate paired with the fruity sweetness of strawberries… I can never get enough of it, and it’s definitely one of my favourite flavour combinations.



What I loved about this recipe is how gosh darned easy it is to make. I sound like such a broken record with that line, I swear. But it's true. I can stir together a batch of this heavenly granola, toss it on a sheet pan, bake it without a care in the world, let it dry out and my goodness... Chocolate chunks, and dried strawberries, all wrapped up with some seriously dolled up old fashioned rolled oats, sure to wet your whistle for a bowl of granola anytime of the day! It tasted just like what you'd imagine a chocolate covered strawberry in granola form. It's stunning, and absolutely delicious.
