Coffee Pecan Frosted Cake

Mmmmm…. cake alert! I find it difficult to resist the temptation to make a slightly-oversized double layered cake from time to time, and I’m gradually working my way through vegan-ising all the Great British favourites.


And today I bring you… the Ultimate Vegan Coffee & Walnut Cake. This one is a definitely keeper, I promise.  The coffee frosting is incredibly creamy and light, and the dark, coffee sponge has just the right level of coffee to be a strong flavour without turning bitter.



I love the combination of pecan and coffee and it really is moist. Don’t you just love when a cake rises so high that you need to take two bites from one fork full of cake. Don’t forget the yummy centre and outer frosting! *Drools*


This is just the sort of showstopper to casually bring in to the school to share with anyone who has passed comment on your veganism recently, (“so do you just eat a lot of salad then?” – you know the ones!).



Imagine sipping a steaming hot cup of rich black coffee…sounds pretty good, right? Now, next to the coffee is a plate with a warm, soft, and perfectly moist slice of this coffee pecan cake…um, yummm. And sitting next to the plate is a fork. Your fork. 


This vegan coffee cake, has some coffee in it. Just in case you were thinking it’s one of those ‘eat with my coffee’ kind of cakes not flavoured with coffee at all. This isn’t one of those. But you definitely CAN eat this with your coffee and I think the coffee flavour in this is just fabulous!
