Creamy Kale Soup in Homemade Bread Bowls

For #meatlessmonday I’m offering up this gorgeous creamy kale soup served in my homemade bread bowl. It is healthy and completely delish. The green swoons. This soup totally warmed me from the inside out. As the title suggests, this one is packed full of not one but two bundles of my favourite detoxifying green vegetable, the all mighty kale. You wouldn’t guess how many veggies are in this soup!



This soup has the advantage of being a crossover between a smooth, thick, blended soup (which I love) and a chunky, textured soup (which I also love). It is a hybrid, with the best of both worlds: a creamy base, with veggies to feast on throughout. You’d never guess this luscious, creamy kale soup is totally dairy-free!



This soup tastes like a bowl full of goodness – and it is! The onion and garlic are sauteed so they’re soft and fragrant. The potatoes are added and cooked with the soup. Once blended they make it rich, thick and creamy. Vegetable stock/broth gives the soup flavour and bulk and then kale is added for all of that green goodness.



I’ve never had a hard time encouraging myself to eat soup. I could probably live off of bowls of soup and hunks of bread without many complaints, and I love coming up with new soup recipes, even if many of them start with a recipe I’ve already made and veer off into new directions.



I absolutely love a good soup with homemade bread. But, put the soup in the bread and you’ve just made magic! Make sure to reserve the cut-out bread for dipping. Don’t waste an ounce of those tasty carbs, okay?
