Where are my ramen fans at? Add a Korean twist to a Japanese classic with this vegan gochujang miso ramen. This spicy ramen is easy to make and so yummy, it’ll satisfy your cravings for restaurant-level ramen! If you don't know, ramen is a traditional Japanese dish that’s an interpretation of Chinese noodles, but it has a Korean spin as well! Ramen is probably my favourite comfort meal ever. Anything with noodles is already at the top of my list.

I love good quality food. I love food, and I love when good food leaves me feeling good — emotionally and physically, but I also have a small place in my heart reserved for convenience foods like instant ramen or frozen pizzas. Enter gochujang - this sweet-salty-spicy paste creates a rich broth with plenty of umami that I balanced with miso and chunks of mild tofu. This noodles have so much flavour! It begins with a simple sauce made of gochujang, miso, chili, sesame, vinegar and fresh garlic, all tossed with ramen noodles and scallions. It is so so easy to come together – and you’re ready to eat in no time.
