And the jackfruit frenzy continues! Yes, jackfruit is life-changing, it has an incredible texture and is bland enough to absorb any flavour that comes its way. This flavourful soup is great for a healthy dinner whether it is hot or cold outside, the broth is warming but refreshing at the same time thanks for the addition of lime juice. Wontons make the whole dish more filling and jackfruit adds a nice meaty texture.
Some of you may not be familiar with jackfruit. Jackfruit is grown on a tree and is actually in the fig and mulberry family. It is the fruit of the Jack tree that we consume. Native to Asia, it is the largest tree-borne fruit. It is very mild in flavour. That is why it is heralded as a vegan meat substitute. This awesome hot & sour jackfruit wonton soup is infused with Asian flavours like ginger, garlic, and lime, and come with a citrusy, spicy broth that is both warming and refreshing at the same time. And these wontons are the bomb, it is all I can say. They are savoury, tender, smoky, and a bit spicy. To sum it up, they are delicious.
I love Chinese food and so does my family. Whenever we dine out at Chinese restaurants, I always end up ordering the hot and sour soup. It is spicy, sour and so satisfying. but, many times, it is also gloopy, slimy and thick with too much corn starch and other additives. Restaurants usually have the soups boiling away on a little burner at the buffet, which makes this soup almost astringent in taste. Not very pleasant. But thankfully, making soups at home is really easy. I eventually came up with my own recipe for vegan hot and sour soup, and it’s been a lasting favourite.
Guys, I’m going through a huge soup phase this year. After spending my whole life pretty much hating soup, I’m bound and determined to find a way to love it. I’ve been trying a new soup every other week or so. Lessons I've learned so far – I need to have lots of extra toppings and tons of flavour every step of the way. The nights (and days) around here have been painfully cold lately, making pretty much every day a soup day!
