Overnight oats are the perfect breakfast if you love eating oatmeal in the morning but don’t have time to cook before you head out the door. Brighten up your morning with a bowl of this healthy vegan lemon overnight chia oats. You might not think that oats would pair well with the acidity of lemon, but the addition of coconut yogurt keeps them super creamy and delicious. And surprisingly, lemons and overnight oats actually taste amazing to me.
This overnight oats recipe is the best bright start to a morning that doesn’t involve any cooking. It’s creamy (without any dairy), full of citrus and chia seeds and packs a lot of fiber into your breakfas t. Chia seeds add fiber and omega-3 fatty acids as well as magnesium and calcium. They are also great for thickening and they add protein to whatever they go in. Rolled oats, on the other hand, are a good source of carbs, protein, dietary fiber, and iron.
I prefer my overnight oats to be super thick and creamy, almost the consistency of pudding. To make them that way I use a good amount of coconut yogurt, less milk and add in chia seeds.
