Hello, my name is Emily and i am addicted to macaroni and cheese. It’s literally my favourite thing to eat on the whole planet! 👅 It’s the weekend and comfort food is called for. So, today I bring you my crazily adapted recipe and what has become my favourite vegan mac and cheese–with no refined oil.
Who knew that potatoes, carrots, onion, cashews, coconut milk, and seasonings could make such a fabulous creamy combination? And that, when mixed with macaroni, that crazy combination will make your taste buds leap for joy? From one cheese lover to another, I’m here to tell you that this mac and “cheese” is remarkably cheese-like and absolutely delicious.
No, it isn’t cheese…even though it kind of looks like it. Instead, it’s a creamy, flavourful alternative to the dairy stuff that will leave you richly satisfied in your decision to leave the cows alone. I always feel bad when a non-vegan tastes vegan “cheese” for the first time. Like, how can this stuff be described except to call it a cheese alternative? We all know that, in reality, not a single one of the veg “cheese” alternatives out there tastes like real cheese. Therefore, may i introduce you to not-real-cheese-but-still-delicious-creamy-yellow-sauce-over-macaroni??
Ok, so there are hundreds of vegan macaroni and cheese recipes out there, but I have never found one that has truly done it for me. Of course I haven’t tried them all, but I have tried a lot, and I have made a lot of my own versions. Until now they have all fallen short of perfection.
You see, I was the hugest mac and cheese lover before I went plant based. It was probably one of my all time favourite meals and let me tell ya, I made the meanest non vegan mac and cheese on the planet. It was incredible. That’s why vegan versions have an awful lot to live up to. It’s just not proper mac and cheese otherwise. I am very hard to please!
