I’m not going to waste your time today with a story or small talk. Rather, I’m going jump right in and tell you how mouthwateringly delicious this pizza was. So delicious, in fact, that as I write this at 12:01 a.m., all I can think about is how bad I want a slice. So, before I dive too far into this post, I want to state right up front: you’re going to love the simple black bean sauce that subs for the good ole standby, tomato-based pizza sauce. I take refried black beans, with its fibre and protein boost, and topped with my favourite vegan tahini nacho cheese voila! Pizza magic, with just a pour and a stir.
We’re keeping the theme of loving our bodies going with another healthy junk food remake. This pizza is in fact like a plate of nachos, in pizza form, and while nacho pizza sounds like a big pan full of regret, this take is actually reasonably healthy. Creamy black bean spread? Check. Roasted veggies? Very healthy. Tahini nacho cheese? Way better than anything that ever came out of a cow.
This is a customizable family friendly dish that anyone from the picky toddler to the moody junk-food-craving teenager to the healthophite (that’s a word now) will go gaga over.
I had a brief laugh with my omma while I was photographing this one, after declaring I was going to name it That’s Nacho Vegan Mexican Pizza! Okay, so I actually did name it that in a first draft of the post, figuring anyone who stuck it out with me and my dorky nacho humour after this post was in for the long run.
If you’ve ever had epic junk food cravings that made you wonder what the lovechild of a pizza and nachos would taste like – it’s this. This is what it tastes like. Listen, y’all, I know this is just a fancy pretty version of a tostada without the lettuce, but since I eat it with my hands, I prefer to think of it as the baby of nachos and pizza. whatever you call it, it’s bomb af 🔥
