Remember back in the 90’s when chocolate lava cake was everything?? How could it not have been, and how could it not still be? I mean, what is better than an individual chocolate cake, so light it practically sighs when you put your fork into it? Spilling out a warm liquid center, so deep, dark, and chocolate-y?? It’s just so decadent. Sinful. Naughty. Sexy.
Is there one dessert that you will always order if it’s on a menu? For me, it’s always molten chocolate cakes (especially if there’s a scoop of vanilla ice cream involved). After having them once in a restaurant when I was younger, I became hell bent on finding a recipe to make them at home. Mmm.. vegan chocolate lava cake. It’s gooey, melty, full of rich dark chocolate, and usually the crown jewel of any dessert menu. I mean, who doesn’t want to take a giant spoonful of a cake that oozes delicious melty chocolate?
However, this time I used matcha green tea to create delicate cakes with a molten lava center. It’s an easy dessert to make for a dinner party or date night. Its base consists of dark chocolate but the bitterness of the matcha neutralised the sweetness of the chocolate perfectly. I used my precious matcha powder from Japan for this, and I’m so glad I did!
I prepared my camera and photo-taking props while the cake was in the oven. Then, I patiently waited another ten minutes for it to cool down before gently unmolding. Finally, the moment of truth. With a spoon, I anxiously sliced down the middle of the cake. My face spread into a victorious smile when the molten lava flowed out. After snapping a gazillion pictures, I proceeded to mount a giant scoop of Azuki bean ice cream on top of the warm cake. Sadly, no pictures of that; but I’m sure you can imagine the harmony of warm, gooey and overflowing matcha lava mixed with the cold and creamy ice cream. It was a marriage of flavours. Simply divine.
What do they taste like? Warm, fudgy, chocolaty, matcha-y, rich, cakey on the outside, super moist in the middle, perfect with coconut whipped cream or ice cream and begging to be shared with a friend or significant other. Choose your favourite adjective; I think they all describe these molten chocolate lava matcha cake so perfectly! And the best part is, they couldn’t be easier to make! Just a few simple ingredients, stirred together, poured into ramekins, and baked. You can make this recipe in less than a half hour, with stuff you probably already have in your pantry. Quick and easy for a weeknight, yet fancy enough to make a big impression!
