No Bake Berry Cheesecake

Not cake. Not made of cheese. But they are spotted and topped with the yummiest tiny blueberries. And there is exactly zero baking standing between you and eating them. And they are pretty damn cute in their mini-ness.

So it is mostly true. But it mostly won’t matter at all once you and your fork get all up in this creamy goodness. Called a cake. Creamy like a pudding. Looks like a muffin. Tastes like dreams. Meet my new favourite indulgent dessert: vegan no bake berry cheesecake that is rich, creamy, perfectly sweet and… vegan, gluten-free and sugar-free!



Before you get all excited, I’ll start by saying that it doesn’t taste exactly like a traditional cheesecake. However, it is the next best thing. In my opinion anyway. There are a lot of no-bake creamy cake recipes out there calling themselves cheesecake, but this one is doing things a little differently. Not too different. Just different enough to be a little easier and a little healthier while still sliding safely under the funky health food radar. Just different enough to pique your must-try-soon interest, perhaps? If I could pass you a spoonful of the filling straight from the blender I can guarantee that would be a big, fat, instant yes. They are no-bake, perfectly portion-controlled little mini cheesecakes filled with a dose of healthy fats, fibre, and vitamin C and only contain four grams of sugar. Totally healthy, but they taste totally indulgent.



And the cheesecake? It is this delicious velvety smooth creamy layer of goodness that mimics cheesecake but actually doesn’t contain any dairy at all. It is creamy, rich, and has the perfect cheese-like tang from the addition of dates and peanut butter. The pb offers that extra something special in this no-bake, raw, and vegan dessert; it takes it from cheesecake-like to knock-your-socks-off, I-can’t-believe-there’s-no-cheese-in-there cheesecake. What a mouthful. Top it off with some vibrant blueberry jam and you’ve got one gorgeous little “cheesecake” cup. In fact, I actually liked it better than cheesecake! That’s a huge statement for me because I love cheesecake. There is nothing I could say to describe the deliciousness of these vegan cheesecake cups. They taste every bit as good as real cheesecake, except they have no animal products, cholesterol, refined sugars, or any overly processed ingredients. The fact that they require no baking and only take 10 minutes to prep is just icing on the, uh, cheesecake.
