The girl guide cookies I used to get when I was a kid sucked. They were cookie sandwiches that came in chocolate or vanilla – boooooring. Every couple years we’d get Thin Mints and I loved those with all my heart. But we never got Samoas or Tagalongs, which honestly I probably wouldn’t have liked as a child, but now I’m obsessed with the idea of them. Especially Samoas. Coconut + caramel + chocolate?! In the form of a cookie?! Come at me. If you don’t know, Samoas consist of a vanilla cookie topped with caramel and toasted coconut and drizzled with chocolate. What’s not to love!?
These no bake Samoa bars or girl-scout cookie bars are healthier raw versions of your favourite Samoa bars. It’s a no bake vegan dessert, 100% refined-sugar free and gluten free. A crumbly coconut shortbread cookie bar topped with a chewy caramel coconut layer Samoas have always had one of my favourite ever flavour combinations, though. For someone who absolutely adores shortbread cookies, caramel, chocolate, and toasted coconut in most forms, putting them all together was a genius move. It begins with a layer of my favourite shortbread, which is buttery and crumbly. Then there’s a thick layer of sweet gooey date caramel mixed with a heap of toasted coconut. They are finished a drizzle (or complete coverage) of dark chocolate. It’s kind of a healthier candy bar.
So do they taste like authentic Samoa cookies? Um, well, I couldn’t tell you … I’ve never actually had a Girl Scout Caramel deLite cookie. But, I can tell you that they taste really darn good. It’s the perfect dessert to enjoy for holidays, or when cookie cravings strike. Which is pretty much every day. I find that these taste better after a day or two of sitting in the fridge, the flavours get a chance really meld together. Also, these Samoa inspired chocolate, caramel, coconut bars are low in sugar, full of fibre, high in protein, allergy friendly, and low in FODMAPS, so they are digestive-ly friendly, too!
