You know what is nice on a cold day? Treating yourself to a stack of pancakes! There’s nothing like filling your belly with warm pancakes topped with your favourite toppings, breakfast comfort food at it’s finest. I made us pancakes just in time for the weekend! These aren’t just any old pancakes. Nope, these vegan PB&J definitely brought in the inner five year old in me!
I'm not sure what came over me today but I decided to release my aversion to flipping and repeating and get down with a peanut-buttery, jelly-covered stack of goodness. and you know what? it was completely, totally, 100% worth the effort. These pancakes are downright delicious and worth every minute of 'cake-flippin' time. The pancakes are home to the peanut butter side of the PB + J equation, with a healthy dose of creamy pb mixed into the batter. The result is a stack of golden, tender, and richly-peanut-buttery pancakes!
Peanut butter and frozen berries are two absolute staples in my kitchen and they’re the perfect toppings for these healthier banana oat pancakes, since they aren’t overly sweet. Peanut butter somehow makes the texture of pancakes awesome, and I probably don't need to preach to you about the awesomeness of chia jam. I’m a huge fan of slathering peanut butter on pancakes so why not bring the two together and make these PB&J pancakes. It’s the perfect way to start your day! Golden and crisp on the outside, and super fluffy and light on the inside, and full of yummy banana flavor!
