When it comes to the perfect cookie, it (1) should be chewy in the center, (2) have slightly crisp edges, and (3) be full of flavor (i.e. ideally contain chocolate). These vegan peanut butter chocolate chip cookies are all that! Plus in a nice large size for your eating pleasure.
Peanut buttery with hints of caramel, puddles of chocolate, and chewy rolled oats, these cookies are ultra dreamy! And nice and easy to make, meaning cookies in your belly with (almost) no effort and (almost) no time!
As you can probably tell I’m a bit of a cookie lover and I also really enjoy baking, which is a bit of a dangerous combination. Some people are falsely under the impression that it’s difficult to make vegan baked goods or that vegan cookies will be hard or bland.
Wrong, wrong, and wrong! These cookies are packed with peanut butter flavour, because what’s a peanut butter cookie without some super delish peanut butter flavour! And then of course I went big with the chocolate chips, actually chocolate chunks! They have a perfect texture – chewy in the middle and crisp around the edges; with a wonderful peanut butter flavour and lots and lots of chocolate.
These cookies are large and in charge! They’re thick, packed with peanut butter flavor and richness, they have slightly crispy edges, they’re beautifully browned on top, almost a little crumbly, but definitely not too much. I packed them full of chocolate chunks because it’s become my preferred thing to do with cookies, chopping up chunks of vegan chocolate and throwing that in to cookie dough creates a tastier cookie in my view rather than using regular chocolate chips. Topped with flakes of sea salt after baking and you get cookies that is like a morsel from heaven!
