Granola is arguably one of the most versatile snacks. You can eat it on top of yogurts, sprinkle it on smoothie bowls, add it to ice cream, or even enjoy it alone with a bit of plant-based milk! Granola is my favourite grab and go favourite for busy mornings. It’s super easy to make at home and is so much better than store bought. This granola is super addicting! I like to serve my granola on top of some yogurt or with soy milk. It’s a great grab and go snack.
If peanut butter and/or chocolate is your middle name, this vegan peanut butter chocolate granola recipe is for you. I’ve struggled a lot with making granola in the past. I love big, chunky granola. I like granola that is basically just broken up granola bars, the kind that you can eat with your fingers instead of needing a spoon. And it’s no secret chocolate and peanut butter are the perfect combos ever. This granola has a rich chocolate flavour with a burst of peanut butter that gets amplified by the roasted nuts.
Peanut butter and chocolate make the perfect combination for this granola. I used creamy peanut butter and maple syrup to help bind everything together. They also help to form those big awesome clusters we all love. This granola is super rich and chocolatey. The cocoa-peanut butter-maple mixture thickly coats the oats, and nuts so well. It all bakes up into the most crunchy, crumbly, and super delicious granola clusters. When it’s taken out of the oven, you fold in some chocolate and let them get all melty, before they’re stirred in to help big clusters form. The result is the ultimate granola to eat when all you want is dessert for breakfast, OMG drool...
