Peanut Butter Chocolate Mousse

As you probably know, I already admitted to being a big chocoholic. But apart from that, I must admit that I'm also a peanut butter-holic. If there is even such a thing. I'm that kind of girl that sneaks to the fridge late at night and gobbles up a spoonful of peanut butter. But I know (and hope) that most of you are like me, so today I made a dessert for us, the choco-peanut-butter-holics. Once in a while I get really excited about a recipe. This is one of those recipes. I’m 99% sure you’ll love this, whether you’re into the vegan and dairy-free thing or not.

This vegan peanut butter chocolate mousse is so good; it's like eating a Reese's with a spoon. Even though it looks like a guilty pleasure you’ll be surprised to see that it’s actually healthy. This mousse turned out smooth and delicious. of course, what could go wrong with the classic combination of chocolate + peanut butter?! This vegan dessert is the perfect treat to serve after making a labor-intensive dinner. The minimal effort will be the break you needed while your dinner guests won’t even realize it was so quick to make.

To make this chocolate peanut butter mousse, it’s very easy. The main note when buying ingredients is to make sure you pick up a soft tofu (not firm)! The soft tofu is what makes for the creamy texture; firm tofu is what you would use when cooking it up for a something like a stir fry. The most important step in making this mousse is chilling it. After you blend it, you’ll notice the texture is pretty runny. Pour it into glasses or bowls, and pop it into the refrigerator for at least 30 minutes to let it set. After setting, the texture will be much closer to a mousse or pudding.
