I have been loving on baked tofu lately. It’s crispy on the outside, chewy on the inside. It can take on any flavours you choose. So reminiscent of that classic sweet and sour dish you love, I’m bringing you this vegan Asian style dish – Pineapple Stir Fry w/ Baked Tofu. This recipe is everything you want and more, it’s easy to make and has minimal ingredients.
Okay so very important question... do you guys like pineapple in savoury dishes?! Clearly I do, as shown by this pineapple tofu rice dish. This pineapple glazed tofu is sweet and smoky in flavour. The juices of the pineapple, the sweetness of the sugar caramelize and create a super delicious crust. Don’t be deterred by the idea of pineapple in your tofu, I can assure you that it is a divine combination!
This easy pineapple stir fry features crisp veggies, sweet pineapple, and chewy baked tofu all smothered in a sweet, salty, sticky stir fry sauce. Dinner in under an hour! Restaurants use lots of oil, and while it might taste delicious, it’s not exactly healthy fare. This recipe has all the flavour and none of the grease. Your tummy will thank you! At last--a sweet-and-sour dish with a fresh, not cloying, taste.
