Pumpkin Crème Brulee

Are you looking for a pumpkin dessert this year that is not pumpkin pie?  Something a little different, a little special, a bit elevated?  This has your name all over it, my friend…

Silky, creamy, melt on your tongue delicious.  There’s nothing better than a soft spoonful of creme brulee. Maybe those pretentious-sounding French words have you doubting your abilities, but don’t let them intimidate you.  The truth is, creme brulee is one of the quickest and easiest desserts you’ll ever bake. And this version is absolutely perfect for anytime time of the year, accented with warm spice and earthy pumpkin, and contrasted with a crunchy caramelised sugar shell.

The passion for pumpkin on the internet seems to be getting bigger every second! You blink and another pumpkin emoji pops up before your eyes with its smiley yellow smirk.

While an equal-sized serving of traditional creme brulee can have as much as 50 grams of fat, 20 grams of sugar, and more calories than an entire meal, this delightfully lightened-up recipe lets you indulge in the luxuriousness of creme brulee without all the added sugar and empty calories. Plus, you get a serving of vegetables at the same time – even pumpkin haters will love this recipe! Close your eyes, and think about how much better this tastes than a boring old pumpkin spice latte.

Snapping through that crunchy, sugar crust to get into the cool, creamy richness of the custard makes me happy. The best part is breaking through the hard candy topping. The second best part is, well, it’s pumpkin!

It tastes as if you took a pumpkin pie and replaced the oat-y crust on the bottom with a caramelised sugar crust on the top. Like the most toasty roast-y sweet pumpkin treat you’ve ever tasted.

If you want that glass-shattering effect then you’re going to need a blow torch, but if you’re okay with just a crunchy crystalised sweet crust then your oven on broil will work just fine.
