Pumpkin Flatbread Pizza

Hi friends! Today I'm going to show you how to make some delicious vegan pumpkin flatbread pizza that will not only wow your taste buds, but also add some lovely colour to your plate. The weather has been pretty gloomy lately, so I'll take all the vibrant colours I can get.


Pizzas don’t have to be a caloric splurge, they can be nutrient dense and packed with flavour!There are some recipes that are just a no brainer. This vegan flatbread pizza is exactly that! Give pizza night a fresh and delicious twist with this easy pumpkin flatbread pizza a chance! Sometimes you just want something fancier than toast or a sandwich, and I'm pleased to say that this flatbread pizza is your guys! Sweet, savoury, smooth and luscious pumpkin puree - so much yum!!  😋


Is your mouth watering yet? This yummy pizza is great as a main dish but can also be cut into squares for a colourful fall appetiser. Slice and serve squares with glasses of crisp white wine, and you won’t know which addictive substance is making everyone so happy.



What I love about this recipe is that it involves a handful of veggies, is colourful, , slightly sweet from the pumpkin puree, mashed avocado and yoghurt drizzle, and the black sesame seeds just puts it over the top!


You can certainly take it in a number of directions by adding fresh herbs, roasted red pepper, thinly sliced apple, etc. If you don’t have squash, sweet potato would be a great substitute. No vegan cheese on hand? Try sprinkling some nutritional yeast on top. The possibilities are endless!


I tested the recipe by putting all my toppings on the flatbread and then baking it, but I found the flatbread had a better texture if I baked it alone and then topped it. You could pop it back in the oven a second time to bring it back to piping hot temperature, but it was fine for us slightly cooled.


I wasn’t sure how leftovers would hold up, but I wrapped the extras in aluminum foil and refrigerated them. The next day I reheated in the oven for 15 minutes and it was amazing! This not only makes a great appetiser, but a satisfying meal on its own or with a green salad.
