Pumpkin Pecan Scones with Maple Glaze

Have you made something so good, you just want to keep making more and eating it over and over again? Today, I nibbled on the only pumpkin-infused food left in my home, the pumpkin scone. These moist, slightly sweet scone is lovely on it’s own, but can also enjoyed with some vegan butter, apple butter or your favourite jam. I like to heat it a bit, and watch the butter melt on the hot scones surface, Mmmmmm.


One reason I love vegan baking is because anyone and everyone can enjoy them. And I truly want all of you here to enjoy my recipes. When I go the route of vegan baking, my aim is to make the vegan-baked good just as tasty as the traditional recipe. Sometimes that can pose a challenge. Especially when, traditionally speaking, baking=butter=flavour.



If you’ve never made vegan scones before and you think it’s hard, let me assure you, it’s not difficult at all. If you follow the directions, as they are written, and you don’t substitute the ingredients for some other crazy ingredients you’re guaranteed to end up with tea (or coffee!) companion worthy treats—vegan pumpkin scone treats that you’ll want to make throughout the year and not just reserve for the fall because they contain pumpkin.

As I’ve mentioned before, I’m not one to name something “skinny,” because I don’t feel comfortable with the connotation, and I use the word “healthy” sparingly in recipe titles, but these are definitely a better-for-you alternative to the coffee-shop version!


If you keep everything chilled, they turn out flaky and crisp and melt in your mouth. Pumpkin does add extra moisture, so they will soften eventually. These are best served right out of the oven. The glaze is a simple caramel-ish mix of pumpkin, coconut milk and sugar, all amply spiced with pumpkin pie spice.



These are a great hostess gift to bring to the loved one hosting your Thanksgiving, or Christmas dinner. Just toss them into a basket with your favourite topping and voila! A gift even a Stepford wife would envy. These also make a great on-the-go breakfast, or can easily be whipped up if you or your loved one are feeling carb-y and snack-y.
