Sourdough Pancakes

This amazing recipe is for all of you sourdough aficionados out there. From the day I began to make sourdough pancakes, I was a changed girl. I have never gone back to making plain old pancakes because, delicious as those are, they do not hold a candle to the amazing flavor and texture of sourdough pancakes. There is more health and nutrition packed into this recipe than you can wrap your head around. There’s sourdough, of course, with all of its great probiotic benefits, not to mention the amazing flavour it adds to just about anything.


If you have never made anything with a sourdough start, it might feel weird the first (and second) time just leaving something on the counter overnight to ferment and capture wild yeast.



Sourdough has so many advantages. There was a time, not too long ago, that all breads were sourdough, and that every cook kept a crock of yeasty flour and water bubbling away in her larder. It was fed daily – scraps of dough or more flour and water – and she would dip into the crock, and pull out starter to make breads, biscuits and even old-world sweets. By contrast, granulated commercial baking yeast has only been made available very recently. The traditional process of sourdough fermentation not only yields beautiful breads, biscuits and pastries, but it also enhances the nutrient profile of grains – deactivating naturally occurring anti-nutrients while also increasing folate content and the availability of minerals.


Sourdough pancakes are thinner than regular pancakes. But they are still delicious. They also work well as wraps for sandwiches.  You can make them thicker by adding extra flour to the batter. I make them both ways…and they are equally delicious!


Fermenting the pancakes leaves you without that heavy feeling pancakes can so easily induce. Instead they are filling but light, substantial but digestible.



And really, what’s not to love? One bowl…no more than 5-10 minutes of prep work (assuming you have that sourdough starter ready) and quick cook time. These quick sourdough cinnamon pancakes get eaten faster than we can get them off the skillet.


What could be tastier than a stack of sourdough pancakes on a cold morning?  These pancakes are light and fluffy with a delicious sourdough flavour that makes for a unique and vintage-style pancake. Enjoy!
