Recently, the unthinkable happened, I was struck with the strongest of peanut sauce cravings and all I had in my overflowing cupboards was almond butter. Sometimes you’ve just got to work with what you’ve got. And sometimes that works, like, really really well. Trust me, almond butter sauce works.
Peanut butter gets a lot of love at our house (especially peanut sauce with noodles), but this week I couldn’t shake a craving for creamy almond butter sauce and chewy spaghetti noodles — it sounded too good. So my suggestion today is to make them a little bit spicy to awaken your palate.
This dish is full of noodles and generous on the sauce, with veggies to help round it out and add some crunch. Damn, there’s just something about noodles and veggies in a spicy almond sauce that makes me want to eat the entire pan!
I love creamy sauces and almond butter adds so much creaminess and flavour to a recipe. and honestly, who doesn’t love noodles, well, i do for sure. These are not just any noodles, trust me. These noodles are cooked directly in a creamy almond butter sauce, spiked with sriracha and garlic and everything delicious in life - so delicious, that’s why I made it a couple of times during the last week.
I’m not usually the type to stray from good ol’ almond butter sauce. It’s perfect just the way it is and I love it to death. Yes I may be biased – I’ve had many versions of almond butter sauce, here and throughout Asia, but this almond butter sauce is still hands-down my all-time very favourite! Not too sweet, perfectly balanced. If you are like me you will be eating it by the spoonful. It’s that good! 👍🏻
