I don’t have a lot to say about this recipe. I mean, there are only so many ways I can say something’s delicious — Mmmmm! Yum! Wow! Awesome! Kid-Friendly! — without sounding like a 4th grader.
You can’t beat a good quiche with a side salad for lunch. But this is no ordinary quiche. This is a plant-based quiche made with tofu! Tofu is an amazing plant-based substitute for meat and eggs. It’s a great source of calcium, protein, omega-3, selenium and zinc, all nutrients that can be lacking in a plant-based diet. I also added some nutritional yeast to give it a cheesy/nutty flavour. Packed full of delicious herby veggies to add more flavour, texture and vibrant colours!
In our busy lives it’s hard to have the time to make a special and impressive dinner. Those are usually saved for the holidays. Well, here is a dinner that is good for any time of the year. You’ll get ooohs and ahhhs no matter when it’s served and it can all be done in under an hour. There is preparation time but then you just slide it in the oven and away it goes.
There seem to be two camps with vegan quiches. The tofu camp, and the no tofu camp. Making a vegan quiche without tofu seems to involve a mixture made with pure chickpea flour. And my delicate sensibilities just cannot handle that onslaught of chickpea flour flavor. I love the ingredient here and there, but if it’s even slightly undercooked, or dominant in a dish, it kinda makes my stomach churn.
This was my first time making a tofu quiche and it really surprised us with how amazing it turned out! Even my dad went crazy for this quiche, often enjoying leftovers twice a day until it was finished. Enjoy it for breakfast, lunch, dinner, or a snack. I've made this a few different ways simply by changing up the vegetables used.
This quiche is simple! So even if you’ve never attempted a quiche before, I have faith that you can nail this version. For those skeptics out there saying, “Yeah, but what does it taste like?” I say, it tastes amazing! Seriously, it’s: savory, satisfying, comforting, loaded with veggies, healthy, crispy on the crust, egg-like in the center and convincingly close to the real thing.
I think this quiche would be lovely for brunches and lazy weekend mornings, as well as when you have family in town for the holidays. I’m confident vegans and non-vegans alike would totally dig this quiche.
