There’s nothing better than a quick and easy dinner! And this vegan veggie chow mein is exactly that. You can have it on the table in less than 30 minutes and it is veggie-packed and simply delicious. Chow means stir-fried and mein means noodles. Chow mein is a Chinese stir-fried noodles dish that is made both with and without meat, and is a very tasty and popular stir-fried vegetable noodle dish originating from China.
It’s strange but chow mein is the first dish I cooked. I tried a few dishes before that too but mostly with the help of my mother. Even before I learned how to make tea or instant noodles I learned how to make chow mein. This vegan version of chow mein is very close to the traditional version and is loaded with vegetables and tofu for a boost of plant-based protein!
It makes for the perfect “clear out the fridge” kind of meal! This is also one of the best ways I know to get my family to eat more veggies — add them to noodles and a sauce and they’ll eat every last bite.
I love take-out just as much as the next person, but usually I have a small gripe with it – too much oil! Traditional chow mein has a lot more oil in it than this recipe but I’m really trying to cut back on unnecessary oil consumption these days That’s why it is great to make these kinds of meals at home, you can control exactly what goes into it. And when it’s as quick and easy as this, it’s really ‘almost’ as easy as doing the take-out order.
