Have you jumped on the TikTok baked oats train yet? If not, you are seriously missing out! Ever since I started experimenting with baked oats, I wanted to create a version that’s chocolate and peanut butter-based. This vegan white chocolate & peanut butter baked oats is one of my favourites. I can’t get enough of it! It is packed full of great ingredients which give you a balanced start to the day and the oats will keep you fuller for longer too.
I’m no stranger to using oat flour to create baked goods, so I can’t believe it’s taken me this long to try this method. And now that I have, there’s no turning back. Best of all, there are no eggs, dairy, or oil in this recipe at all! Well, I tried it and it was love at first bite!
For the filling I just mixed teaspoon yogurt with 1 teaspoon powdered peanut butter! Makes a lush lil peanut butter creme thing - could also probably be made with normal PB but the powdered version is much lower in cals and higher in protein + fibre.
