Last week was my first attempt at zucchini bread. I made this vegan zucchini chocolate bread and even my mum was all about it. You know, I never mentioned the word zucchini when I served it up because if I did I knew she’d never give it a try. The chocolate chips in this zucchini bread are just enough to entice even the pickiest of eaters without being chocolate overload! Zucchini, on the other hand, takes a turn on the sweet side with this extra-moist recipe for bread recipe.
There’s just nothing better than zucchini bread, especially when it’s loaded with chocolate chips. I played around with this recipe a few times to get it perfect — less flour, more zucchini, different oven temps, and baking methods. I ultimately settled on a batter with less flour, a higher oven temp, and more zucchini. I also added greek yogurt for a super soft and moist bread. You would never guess there is zucchini in this!
This bread recipe is amazing! Not too sweet, soft on the inside and crisp and crunchy on the corners. The way the chocolate chips melt throughout the loaf while baking makes for a really delicious quick bread that I think you’ll be making over and over again. I think you’ll love how easy this one is to make…and you’ll love it even more once you take your first warm bite!
