I've tried a lot of the faux meats out there. The burgers, the hot dogs, the bacon, the sausage, the chicken. And while I think a lot of it tastes really good, there have definitely been a few duds. But if I can create it at home, quickly & easily and made out of whole food ingredients, then why not do that instead? I mean, it tastes good and is good for you...I'm down with that.

These vegan cauliflower meatballs are an easy to make, nourishing meal the whole family loves. A delicious vegan meat replacement, they're made without eggs or dairy, are oil-free and gluten-free adaptable, and are just as fabulous cooked in the oven or the air fryer.

If you're scared of cauliflower, the time has come to move past your fear. Believe me - I was afraid of it at a point in my life too. I know it can have a funky smell while you're cooking it. But with the right spices, you can transform cauliflower into a really amazing meal. And in this recipe in particular, you're not even going to know there is cauliflower in there.

You probably think of a cold macaroni salad or an Italian rotini salad when you hear pasta salad. Those are both delicious but lets also normalise stepping out of our comfort zone and trying new things, like this vegan cold spa noodle salad. Not only does this salad look incredibly beautiful, but it tastes incredible!

While there is no lettuce in this salad, I’m going to be a rebel and still call it one. It’s loaded with crunchy veggies like cabbage, carrots, and cucumber. Also, I guess technically the freshly chopped cilantro can count as a green, right?

I tossed my noodles with a creamy, tangy, slightly sweet & spicy sauce. This sauce is effortless to make and so good I swear I’ve been tempted to eat it by the spoon. Overall, this soba noodle salad is a delicious combination of flavours and textures, and completely hits the spot. it’s a little bit of everything – sweet, spicy, salty, noodly and refreshing all in one!
