Lately, I’ve turned to posting quite a few “home-style” dishes. I recently ate an eggplant dish out at a restaurant and I wanted to try to recreate it. It was so flavourful. Well, this is my rendition of that dish, and I have to say I like mine more. Less oil, but plenty of flavour. This vegan braised eggplant noodles with 'minced pork' (肉沫茄子) is another one of those easy dishes that you might see on the table at your parents’ or grandparents’ house!



Eggplants are quite the unique fruit (yes, it is a fruit due it to its edible seeds). Because it is more bitter and savory than I would imagine a fruit would be. It is (and should be) an essential in most households as there are a lot of delicious ways of cooking and preparing it.



It’s a bit of a common misconception that eggplant is terribly tricky to cook right. It’s true that eggplant can end up awfully bland, firm, or greasy when cooked wrong. However, with the proper methods, you’ll never have to worry about that again. In this recipe, by the time the eggplant has been stir-fried and almost “braised” in the sauce, it’s tender enough to practically melt in your mouth. Plus, it is still packed with sweet, savoury, and umami-rich flavour.

Sometimes you crave the irresistible crunch of granola, but store-bought granola can be expensive and usually contains a lot of oil, sugar, and/or maple syrup. Enter vegan peanut butter banana granola.This granola is refined sugar-free and has a fair amount of protein thanks to the peanut butter! The combination of peanut butter & banana is a classic and pairs perfectly with oats, cinnamon, and maple syrup. It’s not too sweet and makes big chunks of crunchy granola clusters!



The part we can all agree on is that yummy peanut butter sauce that gets mixed into everything. It’s made with lots of natural peanut butter (the kind with zero added ingredients), maple syrup, coconut oil (for crunch), vanilla, and a pinch of cinnamon. And it’s guaranteed to kick your granola up a major notch.



Homemade granola is so easy to make at home and so much better than store-bought. If you are worried about homemade granola being difficult to make, think again. This easy and relatively healthy granola recipe only has 8 healthy ingredients. It's packed with fibers, proteins, and Omega-3s. A nutritious meal that is perfect for mornings, noons, or evenings. It doesn’t get any easier than that and I bet you have all of the ingredients in your pantry right now. You mix everything in a bowl and bake until the granola is golden and slightly crispy! Your house will smell amazing too!
