As you probably know, I already admitted to being a big chocoholic. But apart from that, I must admit that I'm also a peanut butter-holic. If there is even such a thing. I'm that kind of girl that sneaks to the fridge late at night and gobbles up a spoonful of peanut butter. But I know (and hope) that most of you are like me, so today I made a dessert for us, the choco-peanut-butter-holics. Once in a while I get really excited about a recipe. This is one of those recipes. I’m 99% sure you’ll love this, whether you’re into the vegan and dairy-free thing or not.

This vegan peanut butter chocolate mousse is so good; it's like eating a Reese's with a spoon. Even though it looks like a guilty pleasure you’ll be surprised to see that it’s actually healthy. This mousse turned out smooth and delicious. of course, what could go wrong with the classic combination of chocolate + peanut butter?! This vegan dessert is the perfect treat to serve after making a labor-intensive dinner. The minimal effort will be the break you needed while your dinner guests won’t even realize it was so quick to make.

To make this chocolate peanut butter mousse, it’s very easy. The main note when buying ingredients is to make sure you pick up a soft tofu (not firm)! The soft tofu is what makes for the creamy texture; firm tofu is what you would use when cooking it up for a something like a stir fry. The most important step in making this mousse is chilling it. After you blend it, you’ll notice the texture is pretty runny. Pour it into glasses or bowls, and pop it into the refrigerator for at least 30 minutes to let it set. After setting, the texture will be much closer to a mousse or pudding.

Eggplant is one of those polarizing vegetables—people either adore its soft, spongy texture…or absolutely detest it. I used to dislike eggplant, until I discovered the steaming method. Eggplants can be tricky to cook due to their ability to absorb a significant amount of oil. So steaming them is a perfect way to avoid that problem. Steaming not only transforms this dish into a super healthy one, but also preserves the Chinese eggplants’ delicate and tender flavour.

This is a dish my mom often makes in the summer because it’s so easy to prepare. It requires very little hands-on time, it doesn’t require that you fire up the wok in the hot weather, it tastes great, and it’s super healthy. The only downside is that it doesn’t look very pretty.

This vegan Chinese-style steamed eggplant recipe adds garlic to the eggplants while they are still piping hot, which helps to remove most of garlic’s raw, spicy, and pungent taste, leaving the dish with a fragrant and mild garlicky flavour. The sauce is intentionally kept light to further accentuate the Chinese eggplants’ subtle sweet flavour.

Stop everything you are doing, and sprint to the kitchen- This recipe for a no bake peanut butter caramel chocolate bar is a dessert game changer. Can we all raise a glass, er I mean bar, to these ooey, gooey and secretly healthy no bake peanut butter caramel chocolate bars! The only downside is that they’re even quicker to disappear. I mean caramel + peanut butter + chocolate. What’s not to love right?

There is just something about caramel that I love. Maybe it’s that the flavour is so unique and delicious or that it’s so creamy and smooth, but i could literally eat it all by itself. These vegan no bake peanut butter caramel chocolate bars are the perfect cross between a flapjack and millionaires shortbread. They are are high in protein, layered with gooey date caramel, and topped with decadent chocolate.

Who loves quick & easy dessert recipes? We are right at the part of the season where the temps keep me from wanting to bake. Which is why I love to make goodies that I can whip up without my oven. So, no judgment for eating two of these caramel bars … or two. Go ahead. promise. I support you.
